Chef Kristian Baumann cut his teeth at world-renowned noma, which speaks to his talent. Then, in July 2016, he opened Restaurant 108 just down the street from noma with the restaurant’s renowned Chef Rene Redzepi. 108 was awarded one Michelin star in February 2017. Not too shabby for a chef who just entered his 30’s!
Kristian and Catbird Chef Ryan Poli met while working together at noma and bonded over long work hours and a dry sense of humor. Baumann talked Poli into staying at noma longer than he had planned and also swayed him into going along to the noma pop up in Japan. (Clearly Baumann has a bit of persuasion in him, eh?) The two have stayed in touch over the past couple years and will be reuniting here in Nashville to prepare dinner for one night only on November 10 for 44 lucky guests.
